This salad is not only beautiful, but delicious and refreshing on a hot day! The cool juicy watermelon mixes nicely well with the salty feta, and the mint balances out the whole bite. Feel free to add in blueberries as well to mix up the flavor some. We'll sometimes eat this by itself for lunch, or as a side with dinner in the summer.
Ingredients:
3 cups seedless watermelon (1 medium sized watermelon) cubed
1/2 cup feta cheese, crumbled
fresh mint leaves, chopped
1 tsp Olive oil
1 tsp lemon zest (optional)
blueberries (optional)
Directions:
In a large bowl, lightly toss watermelon with olive oil, lemon zest, most of the feta (but leave some feta to sprinkle on top at the end), and the mint. Transfer to serving platter and sprinkle with the remainder feta. Keep chilled in fridge until ready to serve.
Feel free to add 1 cup blueberries in as well.
