Swedish Meatballs/Köttbullar



I have to give my mom credit for this recipe as well. We grew up eating lots of delicious Swedish food, which thankfully my family has learned to love as well. Köttbullar has become one of our holiday staples, but the kids like these"baby" meatballs anytime. Traditionally Swedish meatballs are served with mashed potatoes and either ligonberries or a brown sauce; our girls like them plain or with ketchup though.


Our Swedish Christmas dinner featuring swedish meatballs, gravad lax, shrimp toasts, and pickeled cucumbers...all recipes I'll feature soon.

Ingredients:

1 lb ground beef (Optional to also add ¼ lb ground pork)

1/2 tsp salt

½ tsp pepper

3/4 cup plain bread crumbs

1 egg (my mom's recipe on calls for just the yolk, but I use the whole one because I hate having a left over egg white going to waste).

1 1/4 cup milk

1 medium onion minced/grated

optional: dash of ground all spice


Directions:

1. Finely dice the onion and sauté gently in a little butter without browning the onions.


2. Mix together and soak the breadcrumbs, egg, salt, pepper and all spice (if you're using it) in milk.


3. Add the ground meat, along with the sauteed onion to the egg, milk/breadcrumb mixture from step 2 and mix thoroughly. (Add a little extra milk or water if the mixture feels too firm).


4. Shape into small round balls and place on a spare plate.


5. Brown a generous pat (usually about 2 tbsp) of butter in a frying pan, and then place the meatballs in the pan and let them brown on all sides. Shake the frying pan often.


6. Serve with mashed or boiled potatoes and lingonberry relish. You can also serve it with a brown sauce made by adding some flour (about 2 tbsp) to the drippings in the pan and adding some milk or heavy cream to desired thickness while slowly simmering and stirring.
