I feel a little silly even putting this down as a recipe because its so simple but my kids love scrambled eggs. Eggs are an excellent source of protein and so versatile.
We normally just scramble these plain and then add salt, pepper and shredded cheddar cheese to taste. There are so many different scrambled egg recipes out there telling you to add milk or cream, but we've found that sometimes gets too heavy or dense. We prefer to not add any liquid. Also, the key to excellent scrambled eggs is cooking it slowly over medium-low heat.
Directions:
1. Heat a medium skillet over medium-low heat, add 1/2- 1 tbsp butter so the eggs don't stick.
2. Crack the eggs directly into the hot pan and cook slowly over low-medium heat for 4-5 minutes, consistently scrambling them and scraping off the sides.
3. Add salt and pepper to taste. When the eggs are still slightly under cooked feel free to added freshly shredded cheddar if desired so that it melts in nicely while the eggs finish cooking.
