There are tons of great recipes out there sneaking cauliflower in as a low carb alternative in pizza dough, fried rice, mashed potatoes, etc. If you have kids who refuse to eat veggies, these can be great ways to sneak some vegetables in. While I will sometimes sneak veggies in for the kids, we are usually honest and serve them as a featured side of the meal so that our kids learn what they taste like and discover that vegetables are delicious by themselves.
The first time I tried to make cauliflower for the kids, it wasn't a big hit. So the second time around I decided to try roasting them in the oven with Parmesan, olive oil and salt and it was a huge hit! They loved it and even asked for more. I will normally prepare this as a side. Prep time takes about 5 minutes, then while the cauliflower is roasting in the oven you can focus on making the main part of your meal. Enjoy!
Ingredients:
1 head cauliflower, cut into small florets
1 teaspoon sea salt
3 tablespoons olive oil
1/2 cup grated Parmesan cheese
optional: diced garlic
Directions:
1. Preheat oven to 425 degrees F
2. Cut the cauliflower into small florets, place in a large mixing bowl. Drizzle the olive oil, salt, and Parmesan cheese on top. Mix well.
3. Line a baking sheet with aluminum foil. Spread the cauliflower on the prepared baking sheet. Roast in the preheated oven until crisp and slightly golden brown, roughly 20 minutes. Toss 1/2 way through to get a nice even roast.
