Ingredients
1 pound shrimp, peeled and deveined
1 tablespoon olive oil
1/2 teaspoon salt pinch of pepper
1 tablespoon unsalted butter
4-5 garlic cloves, minced
1 lemon
1-2 tablespoons chopped parsley
Instructions
1. Use a paper towel to pat the shrimp dry on both sides. Add the shrimp to a large bowl and toss evenly with olive oil, salt and pepper.
2. Heat a large pan over medium/high heat. Add the butter and let it melt. Add the garlic and cook for 30 seconds. Don't let the garlic burn!
3. Add the shrimp and cook for 2-3 minutes on one side. Then flip and cook for another 2 minutes. Shrimp should be pink and curled.
4. Remove from heat and squeeze fresh lemon juice over the shrimp. Sprinkle parsley, remove from pan immediately and serve right away!
Personally I love serving these shrimp with some pearled couscous or over a bed of homemade pasta, but they are also delicious with rice or on top of a salad. If you like to kick up the spice notch feel free to add some crushed red peppers to the recipe.
