This is one of our favorite recipes that we make almost every week. My 2nd daughter LOVES salmon and will eat this every night if we let her. Salmon is a wonderful source of protein, omega 3's, and potassium. We usually eat this served with rice, broccoli, and spinach-yougrt but you can serve with pasta, salad, couscous, veggies and more.
Ingredients:
1 lb salmon filet
1-2 tablespoons oil (we use olive oil, but can use avocado, sunflower or canola oil)
1 whole lemon sliced
Sea salt and black pepper (optional)
1-2 tsp capers
Directions:
Heat oven to 400°F. Line a baking sheet with aluminum foil. Place the salmon skin-side-down on the aluminum foil.
Brush the salmon with oil. Sprinkle with a salt and black pepper to taste (we skip the pepper). Lay lemon slices on top of salmon and sprinkle with capers.
Fold the edges of aluminum foil over top of salmon like a tent. Bake for about 10-15 minutes.
Just before salmon is done turn the oven onto broil high, uncover the salmon and broil on high for 3-4 minutes to finish cooking and get a very light golden brown color to top.
