I have to give all the credit for this dish to my husband as he came up with it first. Now when the kids want to have this for dinner they will specifically ask for "Daddy's steak". Like our baked salmon, we usually serve this with rice (my husband is 100% Persian so you'll notice we eat a lot of rice, which the kids and I love). If you're trying to limit carbs, this dish is filling enough by itself, esp if you add in a few extra veggies like red peppers. On a side note, for any of these dishes that we serve with rice, I'll often make extra rice so that I can make fried rice the next day for lunch or dinner. The best thing about this version of beef and broccoli is that it really uses minimal ingredients and no sugar (lots of other recipes will call for brown sugar, or extra seasonings & cornstarch that we don't usually keep in our pantry).
Ingredients:
1 lbs steak (any cut works but we usually get flank steak) thinly sliced
1 tablespoon sunflower or olive oil
2 cups broccoli florets
4 tablespoons soy sauce (we use low sodium) divided
1 tablespoons water
Optional: 1 clove garlic chopped up, 1 teaspoon minced ginger, sliced red pepper, cornstarch to thicken sauce at the end.
Directions:
1. Slice up the steak and let it marinate in a ziploc bag with 2 tablespoons of soy sauce. Ideally we try to marinate for at least 10 minutes while we get the rice started. Shake the bag and flip it over every few minutes to let the steak slices fully marinate.
2. Heat 1 teaspoon of oil in a large frying pan over high heat.
3. Once the pan is and oil is hot, add the steak slices in a single layer and cook until lightly browned on each side (roughly 3-4 minutes total; 1-2 minutes per side based on thickness of slices). The steaks will cook for an additional minute or so at the end so don't overcook it now or it will end up dried out and tough.
4. Pour the steak in a separate bowl and set aside.
5. In the pan, add the chopped broccoli (plus garlic or red bell peppers if desired), 1 tablespoon of water, and additional 2 tablespoons of soy sauce. Cover with lid and cook the broccoli over medium-high heat for 4-5 minutes or until almost at desired tenderness.
6. When the broccoli has almost reached desired tenderness, mix the previously cooked steak strips back into the pan and toss together for the final minute.
(If you like slightly thicker sauce you can add 1 tsp cornstarch into the pan for that final minute as well to help thicken the sauce up. We never do that though because I don't normally have cornstarch at home, and our kids like it with the thinner sauce)
